2014 Pinot Gris, Sta. Rita Hills

The 2014 Pinot Gris has a slight blush of "gris" color. The wine has a delicate lychee nut and eidelweiss floral nose. The mouth has early minerality and a viscous texture with pleasant, refreshing grapefruit overtones.

Technical Notes: Whole clustered pressed under inert gas and settled at 50F for 2 nights, the juice was inoculated with an Alsatian isolate and fermented at 65F for 14 days in stainless steel. Malolactic fermentation was blocked. Aged on lees for 9 months in tank with occasional stirring, the wine was eventually racked and fined with skim milk and bentonite for clarity, mouthfeel, and stability. It was bottled in July of 2015 after a light polish filtration.
