The iridescent copper color is simply striking, reminding us of the beautiful hues of the sunset. The nose is of herbal cherry and strawberry aromas, with a refreshing, juicy persimmon tartness on the pallet. ~ Richard Sanford
The vineyard is naturally farmed for Rose production. Soil is heavy in Arita Hills, low drainage, retains water which produces vigorous vines. Will allow for larger berries, ideal for Rose production. Yields were low for 2015 vintage, less than 4 tons per Acre. The clusters were tiny, although the same amount of clusters, less yield.
The Vin gris method or Rose production is a whole cluster press and then treated as a white wine, this vintage was not whole cluster pressed. The skins were only allowed to sit on the skins for 30 min because the color was so intense. It settles under inert gas in tank for 2 nights, then juice is decanted and cultured yeast is added for pure aromatics. Fermented over the course of 10 days. 15-20% is put into barrels and this helps to build the body and viscosity of the wine. The juice is then aged on lees for 6 months then fined and filtered.
Finds the wine to be both bright and concentrated intensity on the pallet. Very fresh wine. Aromas of strawberry, chalky stone characteristics, melon notes, nice acidity that makes your mouth water. The perfect wine for a Sunday Brunch.
